There’s something deeply comforting about a well-made noodle dish. In our house, few things bring everyone to the table faster than the aroma of garlic and ginger sizzling in the wok, a sure sign that Shrimp Chow Fun is on the way. This isn't a fancy restaurant recipe; it's the kind of humble, home-cooked meal that feels like a warm hug. - 1 package of wide rice noodles
- 1 lb shrimp, peeled and deveined
- 1 egg
- 2 Tablespoons corn starch, divided
- 2-3 Tablespoons sesame seed oil, divided
- White pepper
- 3-4 Tablespoons cooking oil, divided
- 2-3 cloves garlic, minced
- A small knob of ginger, minced
- Your favorite stir-fry veggies (bok choy, bell peppers, and onions are perfect)
- 2 Tablespoons sherry cooking wine
- 2 Tablespoons oyster sauce
- 1 Tablespoon soy sauce
- 1 teaspoon sugar
- A splash of vinegar
Getting the Noodles Ready
The key to great Chow Fun is preparing the noodles. They need time and a little patience.
- Soak the rice noodles: The night before, or at least a few hours ahead, place your rice noodles in a large bowl and cover them completely with cool water. Let them sit overnight until they become pliable and soft.
- Boil the noodles: The next day, give them a quick boil for 10-15 minutes until they're tender but still have a slight chew. Immediately rinse them under cold water to stop the cooking process. This prevents them from getting mushy later.
