Lasagna Sandwiches: A Family Favorite
Some of the best recipes aren't found in fancy cookbooks, but are instead passed down on a stained index card or scribbled on the back of an envelope. This is one of those recipes. In our house, we simply call them "Lasagna Sandwiches," though there's not a single noodle in sight. The name comes from the wonderful, savory layering of flavors that reminds us of a hearty pasta bake, all tucked between two slices of golden, buttery bread. It’s the ultimate comfort food for a quick lunch or a simple supper.
The Humble Ingredients
This recipe is wonderfully forgiving and a great way to use up bits and pieces from the fridge. Here’s what you’ll need to make four hearty sandwiches:
- 8 slices of your favorite bread (I use a simple white or sourdough)
- 4 tablespoons mayonnaise
- 2 teaspoons grated Parmesan cheese
- 1 teaspoon dried basil
- 1/4 teaspoon garlic powder
- 8 slices of cooked bacon
- 1 large tomato, thinly sliced
- 4 slices of provolone or mozzarella cheese
- Butter, for toasting
Putting It All Together
The magic is in the layering. It’s a simple process that yields a truly special result.
- First, in a small bowl, stir together the mayonnaise, Parmesan cheese, dried basil, and garlic powder. This little spread is the secret weapon—it adds so much depth!
- Spread this mixture evenly on one side of all eight slices of bread.
- On four of the slices (mayo-side up), layer the bacon, tomato, and a slice of cheese. Top with the remaining bread slices, mayo-side down, so that the flavorful spread is on the inside of the sandwich.
The Perfect Toast
This final step transforms the sandwich from good to unforgettable.
- Melt a generous tablespoon or two of butter in a large skillet or griddle over medium-low heat.
- Carefully place the sandwiches in the skillet. Toast them for a few minutes on each side, pressing down gently with your spatula, until the bread is a perfect golden brown and the cheese inside is wonderfully melted and oozy.
- Don’t be shy about adding a little more butter to the pan for the second side. It’s what gives the crust that irresistible, rich flavor.
Slice the sandwiches in half and serve them warm. They’re deliciously messy, completely satisfying, and taste like home. It’s not a fancy meal, but sometimes, the simplest things are the very best.
