My New Kitchen Obsession: The Falafel Burger

Hey everyone! So, I have to confess: I’m a huge fan of a good burger, but sometimes I want something that feels a bit lighter and packs a serious flavor punch. That’s how I found myself tinkering in the kitchen last week, determined to create a veggie burger that didn’t feel like a compromise. The result? This incredibly delicious and satisfying falafel burger. It’s become an instant favorite in our house, and I just had to share it with you.

The Magic Starts in the Food Processor

The base for these patties is, of course, chickpeas. I use canned for convenience, but here’s a pro tip: take an extra minute to pat them really dry with a paper towel. This helps you get a perfect texture instead of a mushy puree. Throw them into the food processor along with a clove of garlic (or two, I won't judge!) and let it rip. You want it to be pretty smooth.

Getting Your Hands Dirty

Now, this is the fun part. Dump your smooth chickpea mixture into a bowl. Add in your tahini, a good squirt of sriracha for a subtle kick, some freshly chopped parsley, and a bit of finely minced red onion. Now, ditch the spoon. The best tool for this job is your clean hands! Get in there and squish it all together until it’s fully incorporated. It’s a little messy, but totally worth it. Form the mixture into four equal-sized patties.

The Sizzle and The Stack

Heat a generous glug of peanut oil in a large skillet over medium heat. Wait for it to get nice and hot—you’ll know it’s ready when the oil just begins to shimmer. Gently place your patties in the pan and let them cook for about three minutes per side. You’re waiting for that gorgeous, golden-brown crust to form.

While they’re cooking, get your buns ready. As soon as the patties are done, pop them onto your buns and start building. Here’s how I like to top mine:

  • The warm, spiced patty itself, with its crispy outside and soft interior.
  • Two juicy slices of fresh tomato.
  • Two cool, crisp slices of cucumber for a refreshing crunch.
  • A giant, creamy dollop of cool tzatziki sauce that ties everything together.

And that’s it! Serve these bad boys immediately while the patties are still warm and crispy. The combination of the warm, spicy falafel patty with the cool, creamy tzatziki and the fresh veggies is absolutely magical. It’s a burger experience that’s both comforting and excitingly new.
